Decanting Wine

What is “Decanting”?

In Kami no Shizuku or Drops of God, you often hear this word “decanting”. What’s the meaning of this word and why the wine need decanting? At the beginning of the story, Shizuku had shown his impressed skill in wine by helping Miyabi decanting wine for her customer. Decanting is one art of wine that great sommelier have to learn.
ใน Kami no Shizuku หรือ Drops of God คุณจะได้ยินคำๆ นี้บ่อยมาก “decanting” คำนี้มีความหมายว่าอะไร และทำไมจึงต้องมีการดีแคนท์ไวน์ด้วย ในตอนแรกๆ ของเรื่อง ชิซึกุได้แสดงทักษะด้านไวน์อันน่าทึ่งของเขาด้วยการช่วยมิยาบิดีแคนท์ไวน์ การดีแคนท์ไวน์เป็นศาสตร์ของไวน์อย่างหนึ่งที่ซอมเมอเลียร์จะต้องเรียนรู้

Decanting is for removing sediment from a wine, and allowing the wine to breathe. Wine which have aged in bottle, typically red wine rather than white, will generally throw a sediment by perhaps ten years of age or more. Not only is this sediment displeasing to the eye, it can also be quite unpleasant in the mouth. These are things that older, red wines need. Young wine and white wine do not need to be decanted.
การดีแคนท์นั้นทำเพื่อกันเศษตะกอนออกจากไวน์ และให้ไวน์ได้มีโอกาสหายใจ หรือที่ในภาษาไวน์เรียกว่า “การทำให้ไวน์ตื่น” ไวน์ที่ถูกเก็บมานานปีในขวดไวน์ โดยเฉพาะอย่างยิ่งไวน์แดง จะมีเศษตะกอนที่เกิดจากการเก็บไว้นานนับสิบๆ ปี เศษตะกอนนี้นอจากดูไม่งามตาแล้ว ยังไม่บันเทิงลิ้นอีกด้วยถ้าคุณเผลอดื่มมันเข้าไป ไวน์แดงเก่าเก็บจึงจำเป็นต้องมีการดีแคนท์ ส่วนไวน์ใหม่และไวน์ขาวไม่จำเป็นต้องทำขั้นตอนนี้

ขออธิบายอีกสักนิดสำหรับแฟนๆ ชาวไทยที่อาจไม่คุ้นเคยกับศัพท์เทคนิคทางไวน์พวกนี้นะคะ การดีแคนท์คือการเทไวน์ออกจากขวดเอาไว้ในภาชนะรองรับ ซึ่งส่วนใหญ่จะเป็นคนโทหรือเหยือกสำหรับใส่ไวน์ที่เราเรียกกันว่า “คาราฟ” โดยต้องรินโดยไม่ให้ตะกอนในขวดตกลงไปปะปน ซึ่งต้องอาศัยความชำนาญอย่างมาก และอีกนัยหนึ่งก็คือเพื่อให้ไวน์นั้นได้ปล่อยกลิ่นและรสชาติของตัวเองอย่างเต็มที่ คำว่า “ดีแคนท์” นี้เป็นศัพท์เทคนิค จึงขออนุญาตใช้ทับศัพท์ไปเลยนะคะ

The sediment in wine have all sorts of organic things - yeast, grape skins, and so on. The wine naturally has very small particles of these things that, over the years that wine age, settle out of the wine.
ตะกอนในไวน์เกิดจากหลายอย่าง ทั้งยีสต์ เปลือกองุ่น และอื่นๆ อีกมากมาย ไวน์จะมีเศษตะกอนพวกนี้เกิดขึ้นตามธรรมชาติจากการถูกบ่มเก็บมานาน

Most wines on the shelves today, however, have no real need for decanting. The winemaking process ensures the wine is thoroughly clarified before it’s bottled, even if it may mean stripping the wine of some of its flavour.
ไวน์ที่วางขายอยู่ตามห้างเดี๋ยวนี้ไม่จำเป็นต้องทำการดีแคนท์ก็ได้นะคะ เพราะขั้นตอนการผลิตไวน์เดี๋ยวนี้มีการกรองเพื่อความสะอาดอยู่แล้วก่อนถูกบรรจุขวด ถึงแม้มันอาจจะทำลายรสชาติที่แท้จริงของไวน์ไปบ้างก็ตาม

How to decanting wine?

First, take the wine from where it has been stored, hopefully lying on its side in a suitably cool, dark environment. If you suspect a considerable amount of sediment, as may occur with older wines, it's advisable to stand the bottle upright for a day or so prior to decanting, thus allowing the sediment to fall to the bottom of the bottle.
ก่อนอื่นคือนำไวน์ออกมาจากที่เก็บ การเก็บไวน์ต้องวางในแนวนอนในที่ๆ มืดและเย็น ถ้าคุณไม่แน่ใจว่าในไวน์เก่านั้นมีปริมาณตะกอนมากแค่ไหน ขอแนะนำให้นำขวดไวน์มาวางตั้งตรงไว้สัก 1 วันก่อนที่จะทำการดีแคนท์ เพื่อให้ตะกอนตกลงสู่ก้นขวด


Starting with remove the entire capsule from around the neck of the bottle by your cork screw or sommelier knife. It's important to remove the whole capsule, and not just the top, as you need to have a clear view into the neck of the bottle whilst decanting. This is so that you can observe the wine coming through the neck for sediment. To enhance your view of the wine in the neck, light a little candle to shining through the neck from behind. The candle just helps you see the sediment in the bottle neck better as it begins to slide towards the opening.
เรามาเริ่มกันที่การเปิดตะกั่วที่หุ้มปากขวด ให้กรีดที่คอขวดด้วยมีดเปิดจุกขวด ต้องดึงตะกั่วออกให้หมดนะคะ ไม่ใช่แค่เฉพาะตรงที่หุ้มด้านบนเท่านั้น เพื่อจะได้มองเห็นคอขวดชัดๆ ระหว่างที่ทำการดีแคนท์ ทำแบบนี้คุณจะเห็นไวน์ที่ไหลผ่านคอขวดได้ชัดเจนว่ามีตะกอนปนหรือไม่ เพื่อให้เห็นคอขวดชัดเจนยิ่งขึ้น อาจต้องจุดเทียนเล่มเล็กๆ ส่องที่คอขวดไว้ แสงเทียนจะช่วยให้คุณเห็นตะกอนก่อนที่มันจะไหลผ่านคอขวดออกมา


Hold the receptacle, a carafe for wine is good enough, in one hand and the bottle in the other, and with a smooth and steady action, pour the wine into the decanter. Don't rush when decanting, rather use a gentle, steady movement, to avoid disturbing the sediment in the wine. Keep the neck of the bottle over the candle, so that you can observe for an arrowhead of sediment moving into the neck of the bottle. This is your cue to stop pouring.
ถือภาชนะรองรับเอาไว้ในมือข้างหนึ่ง ใช้คนโทใส่ไวน์หรือคาราฟน่าจะเหมาะที่สุด แล้วถือขวดไว้ในมืออีกข้าง ค่อยๆ รินไวน์อย่างช้าๆ นิ่งๆ เวลาทำการดีแคนท์คุณต้องไม่รีบร้อน ใช้ความนุ่มนวลและมั่นคง เพื่อจะได้ไม่กวนให้ตะกอนลอยขึ้นมา ให้คอขวดอยู่เหนือเทียน เพื่อคุณจะได้มองเห็นตะกอนที่กำลังจะไหลผ่านคอขวดออกมา ถ้าเจอตะกอนคุณต้องหยุดรินทันที


Now you have a wine without sediment, a full carafe or decanter of clear wine, with just half a glass or so of sediment-laden wine remaining. This remaining portion makes a great addition to the gravy. Let a wine sit there for a while. Why would you let it sit there? Isn't wine and air a bad combination? Well, yes and no. Yes, during the years of aging you don't want air getting to the wine. However, now that you're about to drink it, air getting across a good surface area of a wine can bring out its aromas.
ทีนี้คุณก็ได้ไวน์สวยใสไร้ตะกอนอยู่ในคาราฟแก้วอย่างสวยงามแล้ว ทิ้งไวน์ก้นขวดที่ปนตะกอนเอาไว้ในขวดประมาณครึ่งแก้ว ส่วนนี้เหมาะมากที่คุณจะนำไปทำน้ำเกรวี่ วางไวน์ทิ้งเอาไว้แบบนั้นสักพัก ทำไมต้องวางมันทิ้งเอาไว้ด้วย ไวน์ไม่ควรสัมผัสกับอากาศไม่ใช่หรือ คำตอบคือทั้งใช่และไม่ใช่ ระหว่างการเก็บบ่มไม่ควรปล่อยให้อากาศเข้าไปปนในไวน์ แต่พอถึงตอนที่คุณกำลังจะดื่มมัน อากาศที่สัมผัสกับไวน์จะช่วยดึงกลิ่นที่แท้จริงของมันออกมา


Remember that your tongue can only taste four types of tastes - all of the other sensations you get from wine come from your nose. You want that wine to be giving off aromas! If it's not releasing flavors into the air, it's going to taste like strange water. You can usually let the wine sit in the decanter for 1/2 to 1 hour before you drink it.
อย่าลืมว่าลิ้นของคุณมีสัมผัสรับรสแค่ 4 อย่างเท่านั้น ส่วนสัมผัสอื่นๆ คุณต้องอาศัยจมูกของคุณช่วย จึงจำเป็นต้องให้ไวน์ส่งกลิ่นออกมา ถ้าไม่มีกลิ่นมาช่วย รสชาติของมันก็เหมือนน้ำรสชาติแปร่งๆ นั่นเอง คุณควรทิ้งไวน์ไว้ในภาชนะสักครึ่งถึงหนึ่งชั่วโมงก่อนดื่ม

Of course, the air causes more damage than good. If you let the wine sit out for about 8 hours which is awful for wine flavor. Also, wine + air = vinegar. If you let it sit there for over 8 hours, the vinegar flavors are going to overpower any nice flavors the wine. If you don't finish the wine over the course of your meal or discussion, seal the rest up and put it into the fridge.
แต่แน่นอนอากาศนั้นมีผลสียมากกว่าดี ถ้าคุณทิ้งไวน์เอาไว้นานเกิน 8 ชั่วโมงย่อมไม่ดีต่อไวน์แน่ๆ เพราะไวน์บวกอากาศเท่ากับน้ำส้มสายชู ถ้าคุณทิ้งไวน์ไว้นานเกิน 8 ชั่วโมง รสชาติของน้ำส้มจะรุนแรงจนกลบกลิ่นหอมของไวน์ซะหมด ถ้าคุณดื่มไวน์ไม่หมดในมื้อนั้นๆ ต้องปิดผนึกส่วนที่เหลืออย่างดีแล้วนำไปเก็บไว้ในตู้เย็น แบบนี้ไงคะยองจุนถึงต้องดื่มไวน์ให้หมดทั้งขวดไม่งั้นมันจะเสียรสชาติได้ค่ะ (ข้ออ้างหรือเปล่าเนี่ย)

Note that just taking a cork out of a bottle does very little as far as "breathing". The tiny amount of surface area touching the air in the bottle neck will cause no real change in the wine over even a few hours.
การดึงจุกคอร์กออกจากปากขวดทำให้ “ไวน์ตื่น” มีอากาศเพียงแค่เล็กน้อยเท่านั้นที่ไหลผ่านปากขวดไปสัมผัสกับไวน์ และมีผลต่อไวน์ไม่มากนักต่อให้เปิดขวดทิ้งไว้นานหลายชั่วโมงก็ตาม
